Tomato Rasam is a light, tangy South Indian soup made by simmering fresh tomato extract with turmeric, asafoetida, and salt, then boosting it with a freshly dry-roasted, coarsely ground spice mix of dals, pepper, cumin, fenugreek, red chillies, and coriander seeds. Once it comes to a boil, the spice powder and curry leaves are stirred in for a quick simmer, and it’s finished with a mustard tempering and a shower of coriander leaves. Comforting, aromatic, and perfect with rice or sipped warm.
This simple rasam can be had as soup or served with hot rice.
