Karamani Fruit Pachadi

Karamani Fruit Pachadi is a delightful and nutritious dish that combines the earthy flavors of cooked cowgram with a sweet jaggery syrup and fresh fruits. To prepare, soak the cowgram overnight, then pressure cook it until tender, ensuring it retains its shape. Meanwhile, create a thick syrup by boiling jaggery powder with water and combining it with the cooked cowgram. In a large bowl, mix assorted fruit pieces with honey, then fold in the jaggery-cowgram mixture. After chilling for at least an hour, this refreshing pachadi is ready to serve, offering a perfect blend of sweetness and health.

A refreshing fruit salad with karamani, jaggary and mixed fruits

Ingredients

  • 1 cup Karamani (cow gram)

  • 1 piece Jaggery (small)

  • 1 cup Mixed Fruits

Directions

  • Soak karamani in water over night or at least 6 to 7 hours. Wash and drain the water. Pressure cook for one to two whistles. Do not overcook. It should be cooked like for making sundal.
  • Drain the excess water and keep aside.
  • Add half cup water to the jaggery powder and bring to boil. Remove it and strain it. Put this jaggery syrup back into stove and make a thick syrup. Add cooked karamani and mix well. Keep the flame to low and stir continuously till the karamani and jiggery blends well. Remove and cool it.
  • In a big glass bowl put all the fruit pieces and add honey. Stir gently. Then add cooked jaggery-karamani and mix well.
  • Refrigerate at least for an hour and serve.

Notes

  • You can add any fruits available in the season.
