Uppu Adai

Uppu Adai is a savory South Indian dish made from ground rice and grated coconut. To prepare it, first soak rice for 5 to 6 hours, then drain and grind it into a soft paste. Mix in grated coconut and salt, adding water to achieve a thick batter consistency. Heat a tava (griddle) and grease it with oil. Then, spread a ladle full of the batter into a dosa shape. Pour more oil around the edges. Cook for 2 to 3 minutes before flipping. Cook the other side as well. Serve hot with onion chutney for a delicious accompaniment.

Ingredients

  • Parboiled rice – 2 cups

  • Grated coconut – 1/2 cup

  • Salt – 1 teaspoon

  • Oil – 4 to 5 teaspoon

Directions

  • Soak the rice in water for about 5 to 6 hours. Drain the excess water and grind to a soft paste. Add grated coconut and salt and mix well. Add enough water and make a thick batter.
  • Heat tava and grease with oil. Take a big laddle of this batter and spread it on the tava like dosa. Pour a teaspoon of oil around the corners. Allow to cook for two to three minutes. Turn it over and cook other side also.
  • Serve with Onion Chutney
