Ingredients

  • Cucumber – 1

  • Tomato – 1

  • Onion – 1

  • Coconut Gratings – 1/4 cup (Optional)

  • Fresh Coriander Leaves – a small bunch

  • Green Chillies – 3 to 4

  • Oil – 2 teaspoons

  • Mustard – 1/2 teaspoon

  • Urad dal – 1 teaspoon

  • Asafoetida powder – a pinch

  • Salt – 1 teaspoon or as per taste

Directions

  • Begin by peeling the skin off the cucumber and cutting it into medium-sized pieces. Chop the onion and tomato into similar-sized pieces.
  • In a kadai, heat a teaspoon of oil. Add the onion and fry for a few seconds, then add the tomato pieces and fry for a bit longer. Next, add the cucumber pieces and green chilies, frying them for a few more seconds. Finally, add the coconut gratings and coriander leaves, mixing everything well before turning off the stove and allowing the mixture to cool.
  • Transfer the cooled mixture into a mixie and grind it with salt to create a coarse paste. Move the paste into a bowl.
  • In a small kadai, heat one teaspoon of oil. Once hot, add mustard seeds. When they start to pop, add urad dal and asafoetida powder. Pour this seasoning over the chutney and mix everything together well.
