Brinjal Sambar Written by Kamala Updated on November 17, 2022 in Kuzhambu Jump to Recipe Print Recipe Pin Print Brinjal Sambar 4 from 1 vote Recipe by S Kamala Course: KuzhambuCuisine: Indian, TamilDifficulty: Easy Servings4servingsPrep time10minutesCooking time10minutes A common sambar recipe served with rice or idli and dosa Ingredients Brinjal – 3 (medium size) Tomato -1 Thuvar dhal – Half cup Tamarind – small lemon size Sambar powder – 1 tablespoon Turmeric powder – ¼ teaspoon Salt – 1 teaspoonFor seasoning 2 teaspoon oil Half teaspoon mustard A pinch of asafetida Few curry leaves Sambar onion – 4 or 5 cut length wise Directions Wash thuvar (thoor) dhal and add two cups of water along with a pinch of turmeric powder and pressure cook till soft.Soak tamarind in water and squeeze out the juice.Cut tomato into medium size pieces. Cut brinjals into medium size pieces. Add water just to cover the brinjals. Add tomato pieces, salt, sambar powder, turmeric powder and cook on medium flame till the vegetable is soft. Add tamarind juice and allow to boil. Now add the cooked thuvar dhal mashed well. In a kadai put the oil and when it is hot add the mustard. When it pops up, add asafotida, cut onions and curry leaves and fry for a while. Add this to the sambar. Mix well. Remove from stove.
