Sambar Mel Podi

Sambar Mel Podi (மேல் பொடி) is a seasoning powder. It is sprinkled over a dish just before it is taken off the stove. There are various Mel Podi blends that can be added to Poriyal, Kootu, and other dishes to enhance their flavor. Mel Podi is a versatile seasoning blend that adds a burst of flavor to a variety of South Indian dishes.

Ingredients

  • Red Chillies – 6

  • Coriander Seeds – 1 small cup (approx. 5 tablespoons)

  • Bengal gram Dal – 3 teaspoons

  • Oil – 2 teaspoons

Directions

  • In a kadai, heat the oil and add coriander seeds along with Bengal gram dal. Fry over a low flame until they turn light brown.
  • Then add red chilies and fry for a few seconds.
  • Transfer everything to a plate and let it cool.
  • Afterward, grind the mixture into a powder and store it in a clean bottle or container.

Notes

  • You can fry the ingredients in a dry Kadai without oil also. This way it will stay good for more days.
