Shallots, often referred to as small onions, sambar onions, or pearl onions, are low in calories and contain no sodium, fat, or cholesterol. They are rich in dietary fiber, vitamin C, vitamin B6, and potassium. Regular intake of onions can help reduce high cholesterol and blood pressure levels. Additionally, they are beneficial for treating common colds, heart disease, diabetes, osteoporosis, and other health issues.
In rural South India, people commonly enjoy raw sambar onions with curd rice for breakfast. The leftover rice is soaked overnight in water, and the next morning, curd or buttermilk along with a pinch of salt is added to the soaked rice, known as Pazhayathu or Pazhaya Sadam, meaning old rice. Some individuals consume the soaked rice plain with raw onion and drink the soaking water, which is both satisfying and refreshing.
Incorporate sambar onions into your recipes whenever possible, particularly in various types of sambars.
