Ingredients
Jackfruit Seeds (Palaa Kottai) – 1 cup
Onion – 1
Tomato – 1
Sambar powder – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Oil – 1 tablespoon
Mustard – 1/2 teaspoon
Urad dhal – 1 teaspoon
Jeera – 1/2 teaspoon
Asafoetida powder – a pinch
Curry leaves – few
Salt – 1 teaspoon or as per taste
Directions
- Halve the jackfruit seeds and peel off the tough, white outer layer.
- Boil the seeds in water until they are soft, then drain off the excess water and set them aside.
- Finely dice the onion and tomato.
- Heat oil in a kadai over a medium flame. Once the oil is hot, add mustard seeds.
- Wait for the mustard seeds to pop before adding urad dal and asafetida, frying until the urad dal turns a light brown color.
- Add the chopped onion and curry leaves, continuing to fry until the onions are soft and translucent.
- Incorporate the diced tomato, frying until the tomatoes break down and become mushy.
- Add the cooked jackfruit seeds to the kadai along with sambar powder, turmeric powder, and salt to taste. Combine everything thoroughly.
- Continue to cook the mixture over a low flame for five minutes, stirring occasionally to prevent sticking.
- 10. Once done, remove the kadai from the stove.
- Your jackfruit seed stir-fry is now ready to be served. Enjoy your meal!
