Ingredients
Cooked Rice – 1 big bowl (sufficient to serve 3)
Tomato – 2 Nos
Onion – 1 No
Mixed vegetables – 2 cups
Green Chillies – 2
Garlic flakes – 4 to 5
Red Chilli Powder – 1/2 teaspoon
Turmeric Powder – 2 pinches
Oil – 3 to 4 teaspoons
Mustard – 1/2 teaspoon
Red Chillies – 2
Curry Leaves – few
Coriander Leaves – few
Salt – 1 teaspoon or as per taste
Directions
Chop tomato, onion, garlic finely.
Slit the green chillies slightly.
For mixed vegetable – you can add available vegetables like carrot, beans, green peas, potato etc. Cut the vegetables into desired size and boil it till it is half cooked.
In a thick bottomed kadai put the oil. When it is hot add mustard. When the mustard starts popping up add red chillies, curry leaves chopped garlic and fry till the garlic turn light brown. Then add chopped onion and fry for few seconds. Put chopped tomato and fry for few more seconds and then green chillies, turmeric powder and fry till tomatoes are mashed well.
Add boiled vegetables along with red chilli powder and salt. Mix them well. Add 1/2 cup water and cook on medium flame for 5 to 7 minutes.

Nice to see a different recipe, I use to create only by adding tomato, but never tried this combination, this is also nice.
