Like other mixed rice dishes, this vegetable tomato rice makes for an excellent lunch or dinner choice. It pairs well with pickle, potato chips, or appalam (papad).

Ingredients

  • Cooked Rice – 1 big bowl (enough to serve 3)

  • Tomato – 2

  • Onion – 1

  • Mixed vegetables – 2 cups

  • Green Chilies – 2

  • Garlic flakes – 4 to 5

  • Red Chili Powder – 1/2 teaspoon

  • Turmeric Powder – 2 pinches

  • Oil – 3 to 4 teaspoons

  • Mustard – 1/2 teaspoon

  • Red Chilies – 2

  • Curry Leaves – few

  • Coriander Leaves – few

  • Salt – 1 teaspoon or as per taste

Directions

  • Finely chop the tomato, onion, and garlic.
  • Slightly slit the green chilies.
  • For vegetables you can add carrots, green peas, potatoes and such. Cut vegetables into desired sizes and boil them until they are half-cooked.
  • In a thick-bottom kadai, heat the oil. When it is hot add mustard seeds. Once the seeds start popping, add red chilies curry leaves and chopped garlic. Fry until the garlic light brown.
  • Then add the chopped onion and fry for a few seconds. Add the chopped tomato and fry for a few more seconds. Then add the green chilies and turmeric powder. Fry until the tomatoes are well mashed.
  • Add the boiled vegetables along with red chili powder and salt. Mix well. Add 1/2 cup water and cook on medium flame for 5 to 7 minutes.
  • Add the cooked rice and mix well.
  • Garnish with coriander leaves.
