Vegetable Tomato Rice

Ingredients

  • Cooked Rice – 1 big bowl (sufficient to serve 3)
  • Tomato – 2 Nos
  • Onion – 1 No
  • Mixed vegetables – 2 cups
  • Green Chillies – 2
  • Garlic flakes – 4 to 5
  • Red Chilli Powder – 1/2 teaspoon
  • Turmeric Powder – 2 pinches
  • Oil – 3 to 4 teaspoons
  • Mustard – 1/2 teaspoon
  • Red Chillies – 2
  • Curry Leaves – few
  • Coriander Leaves – few
  • Salt – 1 teaspoon or as per taste

Directions

  1. Chop tomato, onion, garlic finely.
  2. Slit the green chillies slightly.
  3. For mixed vegetable – you can add available vegetables like carrot, beans, green peas, potato etc.  Cut the vegetables into desired size and boil it till it is half cooked.
  4. In a thick bottomed kadai put the oil.  When it is hot add mustard. When the mustard starts popping up add red chillies, curry leaves chopped garlic and fry till the garlic turn light brown.  Then add chopped onion and fry for few seconds.  Put chopped tomato and fry for few more seconds and then green chillies, turmeric powder and fry till tomatoes are mashed well.
  5. Add boiled vegetables along with red chilli powder and salt.  Mix  them well. Add 1/2 cup water and cook on medium flame for 5 to 7 minutes.
  6. Put the cooked rice and mix well.
  7. Garnish with coriander leaves.
