Mixed Sprouts Sundal

Ingredients
Mixed Sprouts – 1 cup
Red Chillies – 3 to 4
Curry leaves – few
Coconut gratings – 2 tablespoon
Oil – 1 teaspoon
Mustard – ½ teaspoon
Urad dhal – 1 teaspoon
Asafotida – a pinch
Salt – ½ teaspoon or as per taste
Directions
- Cook the sprouted grams in an open vessel by adding a little water and a pinch of salt. Avoid overcooking. (Alternatively, you can microwave them for a few minutes).
- In a kadai, heat the oil and add mustard seeds. Once they pop, add urad dal, broken red chillies, asafoetida powder, coconut gratings, and curry leaves. Fry briefly. Then, add the cooked grams with a pinch of salt. Stir well. Garnish with a tablespoon of fresh coconut gratings.
- To Make Sprout at home
- Soak a cup of whole grams (such as Kondai Kadalai, Mochai, Dry Peas, Green Gram, Horse Gram, whole black Urad, Rajma, etc.) in water for at least 12 hours.
- Rinse thoroughly and place in a muslin cloth, tying it into a bundle. Hang the bundle in a warm place for another 10 to 12 hours.
- Upon opening, you’ll find the grams have sprouted. (In colder climates, sprouting may take longer. You may need to moisten the bundle with a little water and allow more time or place the soaked grams in a hot pack).
Notes
- You can purchase mixed sprouts at vegetable stores or sprout them at home.
