Indulge in a light and flavorful carrot soup recipe with aromatic ginger, green chili, and mint. Velvety texture, versatile, and perfect for any occasion!

Ingredients

  • Carrot – 2

  • Onion – ½

  • Green Chilli – 1

  • Fresh ginger – a small piece

  • Mint leaves – few

  • Salt, Pepper powder as per taste

Directions

  • Chop the onion. Peel the carrot and dice it into small pieces. Slit the green chili lengthwise, and finely chop the ginger and mint leaves. Place the chili, ginger, and mint in a clean piece of muslin cloth, gather the corners, and tie it with a thread to form a bundle.
  • In a pressure cooker, add the onion and carrot, covering them with water. Add the muslin cloth bundle along with the carrot. Season with a pinch of salt and cook for two whistles. Let it cool.
  • After cooling, open the lid and remove the bundle. Squeeze it over the cooked carrot to extract all the flavors. Transfer the carrot and the cooking water into a blender and puree until smooth. Strain the mixture, then pour it into a pot and bring to a boil. Simmer on medium heat until it reaches your desired soup consistency.
  • Serve the soup in bowls, seasoning with additional salt and pepper to taste. Garnish with grated cheese, a dollop of cream, or simple bread croutons.

Notes

  • For added flavor, you may sauté the onion and carrot in a teaspoon of butter before cooking.

    • Hi Nirmala,

      When you bundle the spices, the flavour is mild and perfect for a soup. If you add straight, you will get strong masala smell and more spicy. If you like that taste, you can add it directly.
