Ingredients
Spinach – a small bunch
Cucumber – 1 small
Water – 4 cups
Butter or ghee – 1 tablespoon
Fresh ginger – small piece
Garlic flakes – 2 (small size)
Salt and pepper powder as required
Directions
- Remove the stems from the spinach leaves. Peel the cucumber and remove its seeds, then chop it into small pieces. Finely chop the ginger.
- In a pan over medium heat, melt the butter. Add finely chopped garlic and sauté briefly until aromatic.
- Add the spinach, chopped ginger, and cucumber pieces to the pan. Stir well to combine with the garlic and butter.
- Pour in enough water to submerge the ingredients and bring the mixture to a boil. Reduce heat and simmer until the spinach becomes tender.
- Remove the pan from heat and allow the mixture to cool. Once cooled, blend it into a fine purée using a blender or food processor.
- Strain the purée to remove any remaining fibrous material. Return the strained liquid to the pan and reheat over medium heat.
- Season with salt and pepper to taste. Stir well and serve hot.
