Savor the taste of South India with this exquisite karamani sweet sundal recipe, ideal for festive occasions or simply as a delightful sweet indulgence!

Ingredients

  • Karamani (Cowgram) – 1 cup

  • Jaggery powdered – 1 cup

  • Cardamom Powder – a pinch

  • Honey – 2 tablespoons (optional)

  • Salt – a pinch

Directions

  • Soak karamani in water overnight or for at least 6 to 7 hours.
  • After washing, drain the water. Pressure cook with a pinch of salt for one to two whistles, being careful not to overcook. Then, drain any excess water and set aside.
  • Dissolve the jaggery powder in half a cup of water and bring to a boil. Strain this mixture and return the clear jaggery syrup to the stove to thicken.
  • Add the cooked karamani to the syrup, mixing thoroughly. Keep the flame low and stir continuously until the karamani is well-coated with the jaggery.
  • Finally, remove from heat, add cardamom powder and honey, and combine everything well.
