Vella Sevai is a sweet, comforting twist on idiyappam. First, gently loosen the steamed idiyappam strings. Meanwhile, melt jaggery powder with 1/4 cup water, bring it to a boil, then strain to remove impurities. Return the syrup to the stove and simmer until it reaches a one-string consistency, then stir in cardamom powder and take it off the heat. Pour the warm jaggery syrup over the idiyappam little by little, mixing thoroughly so every strand is evenly coated. Let it rest for a few minutes, then serve warm for a fragrant, melt-in-the-mouth treat.
