This recipe can be prepared with left over rice also. Vegetables can be cooked in microwave. Cut the vegetables into small pieces, sprinkle a handful of water and microwave it for one to two seconds. Capsicum need not be cooked.
This Kootu is mostly prepared on festival days, especially for Thiruvathirai and Pongal. This is also called as “Thalagam” or “Pongal Kootu”.
Note: You can add a tablespoon of fresh coconut gratings at the end. Also you can add any other vegetables like cauliflower, cabbage etc.
