Mudakathan Keerai Dosai is a nutritious and flavorful Indian pancake made from rice and mudakathan keerai (a type of medicinal herb). To prepare, soak rice for 4 to 6 hours, then wash and drain it. Grind the soaked rice with mudakathan keerai and salt to create a fine batter, adding water to achieve a slightly thin consistency. Heat a tawa, grease it with oil, and pour a ladleful of batter, spreading it out. Cook until both sides are golden brown, adding oil around the edges for crispiness. For an easier option, you can enhance regular dosa batter by mixing in a paste of mudakathan keerai and salt, which helps reduce the herb’s bitterness. Enjoy your wholesome dosai as a nutritious meal!
This dosai made with Mudakathan Keerai can be served with Spicy Onion Chutney, or Garlic Chutney
