Ginger Lemon

For added sweetness, you may include a tablespoon of honey or palm jaggery (panag kalkandu) in the juice. If neither is available, simply add a teaspoon of sugar when serving.

I often mix in a teaspoon of “Nannaari Syrup” to the aforementioned juice for an enhanced flavor and color.

Ingredients

  • Fresh ginger – Two big pieces

  • Fresh Lemon – 4 or 5

  • Sugar – 1 cup

  • Water – 1 cup

Directions

  • Peel the ginger and chop it finely. Place it in a blender and process until it becomes a fine paste, adding a little water if needed to achieve a smooth consistency.
  • Halve the lemon and extract the juice.
  • Ensure the ginger paste and lemon juice are in equal quantities; for instance, use half a cup of lemon juice for half a cup of ginger paste. The sugar should be twice the amount of the ginger paste.
  • Pour water into a pot and heat until boiling. Add the sugar, stirring on medium heat until it dissolves completely. Then incorporate the ginger paste thoroughly. Allow it to come to a boil without overboiling; one boil is sufficient. Take off the heat and strain. Let it cool completely before adding the lemon juice and mixing well. The ginger juice will change to a light pink hue. Transfer to a bottle and refrigerate; it will remain fresh for a month.
  • To serve, mix two to three tablespoons of this concentrate with a small glass of ice-cold water, stir well, and enjoy.
