This quick and tangy green apple pickle is a delightful twist on the traditional “Vendhaya Manga,” substituting raw mango with sour green apple. The natural tartness of the apple, combined with the bold flavors of red chili powder, roasted fenugreek, and aromatic mustard tempering, creates a perfect balance of spice and tang. Best enjoyed with curd rice, this simple pickle offers a unique and refreshing accompaniment. However, as it uses fresh ingredients, it is best consumed within a couple of days.
