Savor a rich and savory vegetarian curry made with soft brinjal and crisp cashew nuts. This delightful brinjal cashew nut curry pairs perfectly with rice or roti for a fulfilling dish.

Ingredients

  • 5 medium sized brinjals

  • 1 big onion chopped

  • 10 cashew nuts

  • 2 big tomatoes chopped

  • 1 teaspoon chili powder

  • 1 teaspoon salt or as per taste

  • A pinch of turmeric powder

  • 1/2 teaspoon garam masala powder

  • 2 tablespoons oil

  • 1 teaspoon mustard

  • 1 spring curry leaves

  • 1 teaspoon ghee

  • Oil for deep frying

Directions

  • Slice the brinjals lengthwise, deep fry them in oil, and set aside.
  • In a Kadai put a teaspoon of ghee, fry the cashew nuts and then set aside.
  • Same Kadai add two tablespoons of oil and add mustard seeds. Once they pop, add curry leaves and the chopped onions, frying briefly.
  • Next, add the diced tomatoes and fry for another two to three minutes.
  • Stir in the chili powder, turmeric powder, garam masala, and salt until well combined.
  • Finally, add the fried brinjals and cashew nuts, mix thoroughly, and take off the heat.
