Ingredients
- Brinjal – 4 Nos (Medium)
- Onion – 1 No
- Tomato – 1 No
- Garlic flakes – 4 to 5 Nos
- Fresh ginger – a small piece
- Curry leaves – few
- Sambar powder – 1 teaspoon
- Pepper powder – 2 teaspoons
- Salt – 1 teaspoon
- Turmeric powder – a pinch
- Oil – 4 tablespoons
- Mustard – 1/2 teaspoon
- Jeera – 1 teaspoon
Chop the onion, ginger, garlic and tomatoes finely. Cut the brinjal into medium size pieces.
In a kadai put the oil and when it is hot add mustard. When it pops up add jeera and fry for a second. Then add chopped onion and fry for a while. Then add curry leaves, garlic and ginger and fry. Add tomatoes and brinjal and sprinkle a handful of water. Cover with a lid and cook till the brinjal is soft. (No need to add water if the brinjal is fresh and tender). Keep the flame to low. Add sambar powder, turmeric and salt. Mix well and fry for few more seconds. Finally add the pepper powder and mix well.
You can increase or decrease the pepper powder according to your taste.
