Pudina (Mint) Rice

Pudina rice is a flavorful and aromatic South Indian rice dish made with fresh mint leaves, spices, coconut milk and cooked rice. It is a popular dish that is often served as a main course or as a side dish in Indian cuisine. A flavored rice made with mint and coconut milk. This pudina rice goes well with Carrot Kurma, Potato Peas Kurma or any gravy type side dish

Ingredients

  • Raw Rice – 2 cups

  • Coconut Milk – 1 cup

  • Big Onion – 1

  • Lemon Juice – 1 teaspoon

  • Turmeric Powder – ยผ teaspoon

  • Salt – 1 teaspoon or as per taste

  • To grind:
  • Mint Leaves – 2 cups

  • Coriander leaves – ยฝ cup

  • Green chillies – 2 to 3

  • Fresh ginger – 1″ piece

  • Garlic cloves – 2

  • For seasoning:
  • Oil – 4 tablespoon

  • Cinnamon stick – 2 small pieces

  • Star anise – 1

  • Marathi Moggu – 1

  • Cloves – 2

  • Cardamom – 2

  • Bay Leaf – A small piece

  • Fennel seeds – 1 teaspoon

Directions

  • Wash the rice and soak it in water for about 15 minutes.
  • Chop the onion.
  • Grind the mint leaves, coriander leaves, green chilies, ginger, and garlic into a fine paste.
  • Heat oil in a pressure cooker. When hot, add the cinnamon stick, star anise, marathi moggu, cloves, cardamom, bay leaf, and fennel seeds. Add the chopped onion and fry until it becomes transparent.
  • Add the mint-coriander paste, turmeric powder, and salt. Stir fry for a few minutes.
  • Drain the excess water from the soaked rice and add it to the seasoning. Mix well.
  • Add coconut milk and water, ensuring the total liquid equals four cups. Stir once more, then close the pressure cooker with the lid.
  • Pressure cook for three to four whistles.
  • Once cooled, add lemon juice and gently mix.
  • Serve with raita or your desired gravy.

Notes

  • You may substitute raw rice with Basmati rice. Additionally, ghee can be used in place of oil, or you can opt for a blend of both oil and ghee. Should you prefer, you can forego the coconut milk and simply cook with water.

    Hi!! Amazing. I have a bag of dried pudina leaves at home. If I used dried, would I use less than 2 cups? Great idea!

  4. Hi Jennifer,

    Normally I use one cup fresh leaves for one cup rice. When we grind the fresh leaves the quantity of paste per cup of leaves is approx a heaped tablespoon. So you can powder the dried pudina leaves and use one tablespoon powder for a cup of rice. Ofcourse the quantity will differ as per one’s taste. You can reduce or increase the quantity as per your taste.

    Pl tell how to retain the fresh green color of pudina. I tried this recipe tasted awesome but the color was a slight brownish green. I did not add coconut milk, only water… Is that the reason? Pl reply.
