Ingredients
Pottukadalai – 3 cups
Sugar – 2 cups
Ghee – ½ cup
Cardamon – 8
Cashew Nuts – 10
Directions
- In a blender, grind the pottukadalai to a fine powder. Do the same for the sugar. Sieve both powders to ensure they’re lump-free.
- Measure out equal amounts of the pottukadalai and sugar powders and combine them in a mixing bowl.
- Grind cardamom to a powder and incorporate it into the mixture.
- Heat a teaspoon of ghee in a kadai (or wok) and fry the cashew nuts until golden brown. Add these to the dry mixture and combine well.
- In the same kadai, melt the remaining ghee. Once hot, pour it over the flour mixture. Stir thoroughly using a spoon.
- When the mixture is warm to the touch, knead it by hand and shape it into small, lemon-sized balls. Continue until you’ve used all the mixture.
- This recipe should yield approximately 20 Urundais.
