Coconut Idiyappam is a delightful South Indian dish made from rice flour and fresh coconut. To prepare it, start by boiling two cups of water with a pinch of salt and a teaspoon of oil. Gradually mix this boiling water into one cup of flour to form a soft dough. Grease an idiyappam plate and fill an idiyappam maker with a portion of the dough, pressing it out in circular shapes onto the plate. Top the rice strings with fresh grated coconut and steam for about 5 minutes. Once done, sprinkle with a little sugar and a pinch of cardamom powder, then mix well for a deliciously sweet and aromatic treat.
