Ingredients

  • Rawa – 2 cups

  • Onion – 2

  • Green Chillies – 4

  • Curry Leaves – 1 spring

  • Carrot – 1

  • Beans – 6 to 8

  • Fresh Green Peas – ½ cup

  • Cloves – 4

  • Cinamon – 2 small pieces

  • Turmeric powder – a pinch

  • Ginger garlic paste – 1 teaspoon

  • Lime Juice – 1 tablespoon

  • Cashews – few

  • Water 4 cups

  • Salt to taste

  • Oil-10 tablespoon

  • Ghee-4-5 tsp

  • Mustard Seeds – 1 teaspoon

  • Urad dhal – 1 teaspoon

Directions

  • Dice the carrots and beans into small pieces. In a bowl, combine the carrots, beans, and green peas. Add a small amount of water and cook for about 5 minutes. (Alternatively, you can microwave the vegetables until tender).
  • Finely chop the onion and green chilies.
  • In a kadai or deep frying pan, add a small amount of oil and heat it up. Add the rawa (semolina) and sauté until a pleasant aroma is released. Remove the roasted rawa and set it aside.
  • In the same kadai, add the remaining oil and ghee. Once hot, add mustard seeds. When they start to pop, toss in the cinnamon stick, cloves, urad dal, and cashew nuts. Sauté until they turn light brown.
  • Stir in ginger-garlic paste or whole crushed ginger and garlic. Sauté for a minute or so, until fragrant.
  • Add the chopped onion, green chilies, and curry leaves. Continue sautéing until the onion becomes translucent.
  • Add turmeric powder and the cooked vegetables. Mix thoroughly.
  • Pour in enough water for your desired consistency, then add salt. Bring the mixture to a boil.
  • As it starts boiling, gradually add the roasted rawa, stirring constantly to avoid forming lumps.
  • 10. Once everything is well combined, add lime juice and give it one final stir.
  • Enjoy your flavorful vegetable rawa dish!

Notes

  • Instead of ginger garlic paste, just crush little ginger and three to four cloves garlic and use it. It will give mild flavour
