Tomato

Tomato (Solanum lycopersicum) is a versatile, mildly acidic fruit commonly treated as a vegetable in cooking. Its bright color, juiciness and tang make it a staple in many cuisines worldwide. In South Indian kitchens, this vegetable is prized for adding body and rich color. It brings a balanced sweet-tart flavor to soups, stews, chutneys, rice dishes, and pickles.

Tomatoes have good nutritive value and are good source of potassium, B- carotene (vitamin A) and vitamin C. It is very low in calories and advisable to weight reducing diet. They are also rich in lycopene which is very helpful in reducing the risk of heart disease and cancer. Lycopene is activated while cooking.
