Brinjal Besan Curry

Brinjal and Besan Curry pairs nicely with Chapati and can also be enjoyed with steaming hot rice.

Ingredients

  • Brinjal – 4 to 5

  • Big Onion – ½

  • Fresh Ginger – a small piece

  • Sambar Powder – 2 teaspoon

  • Turmeric Powder – ¼ teaspoon

  • Besan flour – 1 to 1½ tablespoon

  • Salt – 1 teaspoon or as per taste

  • For Seasoning:
  • Oil – 2 tablespoons

  • Mustard – ½ teaspoon

  • Cumin – ½ teaspoon

  • Asafoetida powder – a pinch

  • Curry leaves – few

  • Peanut coarsely powdered – 1 tablespoon (optional)

Directions

  • Slice the brinjals lengthwise into thin pieces. Finely chop the onion and ginger.
  • Heat oil in a kadai, and once hot, add mustard seeds. Wait for them to pop before adding cumin. Then, stir in the chopped onion, ginger, and curry leaves. Sauté for a short time.
  • Introduce the brinjal slices and mix thoroughly. Continue to cook on a medium flame, stirring occasionally for a few minutes.
  • Next, incorporate sambar powder, turmeric powder, and salt. Stir well. Lightly sprinkle water over the mixture. Cover with a lid and simmer on a low flame until the brinjal becomes tender.
  • Stir in the besan flour until evenly combined.
  • Lastly, add the coarsely ground peanut powder and blend well.
  • After adding besan, the brinjal may appear dry. For a glossy finish, drizzle in one or two teaspoons of oil towards the end, stir for a few seconds, then remove from heat.
