Ingredients

  • Karamani (Cow gram) sprouted – 1 cup

  • Tomato – 1 big

  • Onion – 1

  • Salt – 1 teaspoon

  • Sambar Powder – 1 heaped teaspoon

  • Turmeric powder – 1/2 teaspoon

  • Oil – 2 tablespoon

  • Mustard – 1/2 teaspoon

  • Jeera – 1 teaspoon

  • Asafoetida powder – a pinch

  • Curry leaves – few

  • Coriander leaves – chopped – 1 tablespoon

Directions

  • Soak one cup of karamani in water for at least 8 hours. After soaking, drain the water and place the karamani in a clean cloth, tie it into a bundle, and hang it overnight. Alternatively, you can use pre-sprouted karamani from the store.
  • Finely chop the onion and tomato.
  • Boil a cup of water, or just enough to cover the karamani, and add the sprouted karamani with a pinch of salt. Cook until soft.
  • Heat oil in a kadai; when hot, add mustard seeds. Once they pop, add cumin and asafoetida powder.
  • Next, add the chopped onions and curry leaves and fry until onions are well cooked. Add tomatoes and fry until they are well mashed.
  • Then, stir in sambar powder, turmeric, and salt. Add the cooked karamani and mix thoroughly. Simmer on low heat until the mixture is well blended and dry.
  • Finally, stir in the chopped coriander leaves.
