A potato side dish made with mint (Pudina) and potato. This dish can be served with hot rice.

Ingredients

  • Potato – 2 Nos

  • Pudina (Mint leaves) – a handful

  • Onion – 1 Big

  • Tomato – 1

  • Fresh Ginger – a small piece

  • Garlic – 2 flakes

  • Curry leaves – few

  • Sambar powder – 2 teaspoons

  • Turmeric powder – 1/4 teaspoon

  • Salt – 1 teaspoon

  • Oil – 4 tablespoon

  • Mustard – ½ teaspoon

Directions

  • Pressure-cooking the potatoes until they are soft will make them easier to remove the skin and cut them into smaller pieces.
  • You can also crush ginger and garlic and chop the onion and tomato finely.
  • Then, in a frying pan, heat some oil and add mustard. When it pops, add the chopped onion and curry leaves and fry until the onion is transparent.
  • Add ginger garlic paste and fry for a while.
  • Then add the tomatoes, turmeric powder, sambar powder, and salt.
  • Fry until the tomatoes are mashed.
  • Finally, add the potato pieces and mix well.
  • Keep the stove low and stir the potatoes occasionally until the potato curry is dry.

    a wonderful site….i was searching for south indian cooking and bumped into your site…i live in the usa and my husband is very particular about the traditional way of making dishes. He doesn’t like cookbook stuffs and your recipes are just like the way how my mom makes.
