Potato rice offers a rich and robust flavor, making it an ideal choice for an uncomplicated yet fulfilling dish.

Ingredients

  • 1 cup raw rice

  • 1 big potato

  • 2 red chillies

  • 1 tablespoon coriander seeds

  • 1 teaspoon bengal gram dhal

  • 1 teaspoon urdu dhal

  • A pinch of asafoetida

  • A pinch of turmeric powder

  • 5 cashew nuts

  • 2 tablespoon oil

  • Half teaspoon mustard

  • 1 teaspoon salt

  • Curry leaves – few

  • Ghee – 1 teaspoon

Directions

  • Pressure cook the rice with 2 cups of water, ensuring the grains remain separate. Allow it to cool on a large plate.
  • Boil the potatoes until they are soft, then peel and chop them into medium-sized pieces.
  • In a kadai, heat one tablespoon of oil and fry the dals, chilies, coriander seeds, and asafetida. After cooling, grind them into a dry powder with salt.
  • Using the same kadai, heat the remaining oil and add mustard seeds. Once they pop, add cashew nuts and curry leaves, frying them briefly. Next, incorporate the potato pieces with a pinch of salt and turmeric, stir-frying for a few seconds.
  • Lower the heat, add the cooked rice and ground spice mix, and combine everything well. Finally, stir in a teaspoon of ghee before serving.
  • Enjoy this dish with a mild kurma of your choice.

    • Thank you for your feed back Lydia Grace. To make ghee from butter – In a thick bottomed vessel put the butter and keep it on medium flame. Stir now and then. First butter starts melting and then starts boiling. After few minutes, you will find oil like substance. This is ghee. At this point switch off the stove. Remove the vessel and strain it to a clean jar. Keep it in a cool place. After few hours, it will become solid. Before removing the ghee from stove, you can add a string of curry leaves or drumstickstick leaves. Then strain it. This will enhance the flavour. Please note that you have to use good quality unsalted butter for this.
