It also includes the subtle earthiness of beetroot. Fresh beetroot is blended into a fine puree. The puree is strained to extract its juice. Ripe bananas are ground into a smooth paste. Roasted cashew nuts and raisins add a delightful crunch, while aromatic cardamom enhances the flavor. To prepare the dish, first roast semolina (rava) in ghee. Next, cook it with banana puree, beetroot juice, and milk. Add sugar to achieve the perfect consistency. Introducing Beetroot Banana Kesari! A vibrant twist on traditional kesari, blending banana sweetness with vibrant beetroot for a unique, flavorful dessert.

Ingredients

  • Banana (Fully Ripe) – 1

  • Beetroot pieces – ½ cup

  • Rava – ½ cup

  • Sugar – ½ cup

  • Ghee – 2 to 3 tablespoons

  • Milk – ½ cup

  • Cashew Nuts – few

  • Raisins – few

  • Cardamom Powder – ¼ teaspoon

Directions

  • In a blender, add the root pieces along with 1/2 cup of water and grind it to a fine puree. Strain the puree to extract the beet juice and store it.
  • Cut the banana into pieces and grind it to a paste.
  • In a frying pan (kadai), add ghee and roast the cashew nuts and raisins. Remove and set them aside.
  • In the same kadai, add rava and fry until a nice aroma. Add the banana puree and mix it well. Then the beet juice and thoroughly mix it.
  • Add milk and stir well. Once the milk is absorbed, add sugar and stir until it thickens and leaves the sides of the vessel.
  • If necessary, add a few drops of ghee to guarantee the kesari comes of the vessel without sticking.
  • Finally, add cardamom powder fried cashew nuts and raisins. Mix well and remove from heat.

      In this recipe, I have added beetroot juice to give natural colour to the kesari. You can also use carrot juice and make Carrot Banana Kesari. Or even for normal kesari, we can use fresh veg juices to get natural colour.

    Should we cook the beetroot and then grind it? Rawa is large size or small size?
