Once the mass is leaving the sides of the vessel and form a ball like mass, then it is understood that the pagu is blended well with other ingredients. If you remove the buri at this stage and once it is cool, then you can cut it without any diffculty.

Hi Kamala ji..ur recipes r just too good. .have tried most of them and I refer only to ur website ..ji 1 doubt,I tried making this burfi exactly with the same quantity of ingredients mentioned..however when I transferred to a plate and waited for half an hour,even then its so loose due to which am not able to cut into shapes.Could you please let me know why and wat to do ?
I think the burfi is not cooked to the right consistency. Sometime, due to the quality of the milk, it will take more time to get the right consistency. If you microwave it for few seconds, then it will become little hard and you will be able to cut it.
