Pumpkin Carrot Kootu

This kootu is prepared with yellow Pumpkin, Carrot and Green Gram Dal (moong dal). Makes a great side dish.

Ingredients

  • Yellow pumpkin – one medium size piece

  • Carrot – 2

  • Tomato – 1

  • Green Gram Dal – 1/2 cup

  • Sambar Powder – 1 teaspoon

  • Turmeric Powder – 1/4 teaspoon

  • Kootu Podi – 2 teaspoons

  • Salt – 1 teaspoon or as per taste

  • For Seasoning:
  • Oil – 1 teaspoon

  • Mustard – 1/2 teaspoon

  • Urad Dal – 1 teaspoon

  • Asafoetida Powder – 2 pinches

  • Chopped Onion – 1 tablespoon

  • Curry leaves – few

Directions

  • Remove the skin from the pumpkin and carrot and cut it into small pieces.
  • Also cut the tomato into small pieces.
  • Put the green gram dal along with the turmeric powder in a vessel. Add enough water. Cook until its three-fourths cooked.
  • Add chopped pumpkin, carrot and tomato pieces, sambar powder, salt and half cup water. Mix well and allow to cook till the vegetables are soft.
  • Now add the Kootu Podi and mix well.
  • In a tadka ladle put a teaspoon of oil. When it is hot add mustard, urad dal, asafoetida powder, chopped onion and curry leaves. Fry for few seconds and add this seasoning to the Kootu. Mix it once again and remove.

Notes

  • I made this Kootu watery so that we can mix it with rice and eat. If you want it thicker, then reduce the quantity of water while cooking.
