Ingredients

  • Potato – 4

  • Coriander Leaves – a small bunch

  • Green Chillies – 3 to 4

  • Fresh Ginger – a small piece

  • Red Chilli Powder – 1/2 teaspoon

  • Coriander Powder – 1 teaspoon

  • Turmeric Powder – two pinches

  • Oil – 2 tablespoons

  • Cumin (Jeeragam) – 1 teaspoon

  • Salt – 1 teaspoon or as per taste

Directions

  • Wash and peel the potatoes, then cut them into bite-sized squares. Boil them until they are half-cooked, or pressure cook for one to two whistles.
  • Chop the coriander leaves to make one cup of chopped leaves. Combine with ginger and green chilies and grind into a paste.
  • Heat oil in a tawa, then add the half-cooked potato pieces and stir-fry until they turn light brown.
  • Add the coriander paste, red chili powder, coriander powder, turmeric, and salt. Mix thoroughly and continue to stir-fry until the potatoes are well-coated with the paste and crispy.
  • This dish pairs well with rice and chapati.
