Watermelon Cold Soup

This chilled watermelon cold soup is the perfect refreshment for hot summer days. It combines the sweetness of watermelon with tangy curd. The dish also includes the zest of ginger and mint. Garnish with extra watermelon, finely chopped sambar onion, and mint leaves in a glass or bowl.

In this recipe, sambar onion is used raw. If the raw aroma is not to your liking, sauté it in a few drops of oil. Do this before adding it to the soup.

Ingredients

  • Watermelon cubes – 1 cup

  • Curd – 1/2 cup

  • Lime Juice – 1/2 teaspoon

  • Fresh Ginger – a small piece

  • Pepper powder – a pinch

  • Salt – a pinch

  • Mint Leaves – few

  • Sambar Onion – 2

Directions

  • Combine the watermelon pieces, curd, ginger, and mint leaves in a blender and puree until smooth.
  • Stir in lemon juice, salt, and pepper powder.
  • Chill in the refrigerator for at least 30 minutes.
  • Serve in a glass or bowl, topped with extra watermelon pieces, finely chopped sambar onion, and mint leaves.
