• Red Chilli - 1 cup
  • Coriander seeds - 1 cup
  • Thuvar Dhal - 1/4 cup
  • Bengal gram dhal - 1/4 cup
  • Urad dhal - 2 tablespoons
  • Black Pepper - 1 tablespoon
  • Jeera - 1 teaspoon
  • Fenugreek seeds - 1 teaspoon
  • Oil - Two or three teaspoons

 Method:

In a little oil, fry separately coriander seeds, red chillies, Bengal gram, thuvar dal, fenugreek seeds, pepper and jeera to a light golden colour. When cooled, grind all these ingredients to a fine powder.

Note: To make vatha kuzhambu, soak lemon size tamarind in water and extract the tamarind juice. Add enough water and make two cups of tamarind water. Add turmeric powder and a teaspoon of salt to the tamarind water and bring to boil. When it starts boiling, add one tablespoon vatha kuzhambu podi and allow to boil for few seconds.

Season it with mustard, fenugreek and asafotida powder.
