Indulge in this flavorful Potato Curry made with onion and sambar powder. Perfect with rice or as a side dish to Indian bread like chapathi. Try other potato recipes like Pudina Potato Curry and Potato Gravy!

Ingredients

  • Potato – 4 Nos (Medium size)

  • Onion – 1 Big

  • Sambar powder – 1 tablespoon

  • Turmeric powder – ½ teaspoon

  • Oil – 4 tablespoon

  • Mustard – ½ teaspoon

  • Urad dhal – 1 teaspoon

  • Asafoetida powder – 1/4 teaspoon

  • Curry leaves – few

  • Salt – 1 teaspoon or as per taste

Directions

  • Pressure cook the potatoes until soft. Remove the skin and cut it into medium size pieces. Chop the onion finely.
  • In a frying pan put the oil and when it is hot add mustard.
  • When it pops up add urad dal, asafoetida powder and fry till the dal become light brown.
  • Add the chopped onion and curry leaves and fry till onion turns transparent.
  • Add potato pieces. Sprinkle turmeric powder, sambar powder and salt.
  • Mix gently and ensure the sambar powder coat well on the potatoes.
  • Keep the stove low and stir the potatoes now and then till the potato curry changes its colour to a light brown.
