Vatha Kuzhambu Podi

This mix (podi) is used for making vatha kuzhambu. It is made with two kinds of dhal and other Indian spices. Don’t forget to checkout Kootu podi also.

This mix (podi) is used for making vatha kuzhambu. It is made with two kinds of dhal and other Indian spices.

Ingredients

  • Red Chilli – 1 cup

  • Coriander seeds – 1 cup

  • Thuvar Dhal – 1/4 cup

  • Bengal gram dhal – 1/4 cup

  • Urad dhal – 2 tablespoons

  • Black Pepper – 1 tablespoon

  • Jeera – 1 teaspoon

  • Fenugreek seeds – 1 teaspoon

  • Oil – Two or three teaspoons

Directions

  • In a little oil, fry separately coriander seeds, red chillies, Bengal gram, thuvar dal, fenugreek seeds, pepper and jeera to a light golden colour.
  • When cooled, grind all these ingredients to a fine powder.
  • To make vatha kuzhambu
  • Soak lemon size tamarind in water and extract the tamarind juice. Add enough water and make two cups of tamarind water.
  • Add turmeric powder and a teaspoon of salt to the tamarind water and bring to boil.
  • When it starts boiling, add one tablespoon vatha kuzhambu podi and allow to boil for few seconds.
  • Season it with mustard, fenugreek and asafotida powder.

    Hi…u can make it wit til oil; ie.nallennai fr te seasoning; tastes better; and also add curry leaves while seasoning. jst a small suggestion.

    • Hi Arthy,

      For Vatha Kuzhambu, normally “Vathal” (Dried vegetables like sundaikai vathal, Manathakkali Vathal) is used. However, we can add Brinjal, Broad Beans, Raw Banana, Yam, etc. When you add vegetable to the vatha kuzhambu, it is called “Puzhi Kuzhambu”.
