- Rice flour - 1 cup
- Salt - a pinch
- Oil - 1 teaspoon
Normally Idiyappam is prepared from home made rice flour. To make rice flour at home, soak 2 to 3 cups of raw rice four hours. Drain the water completely. Put it in a mixie in batches and grind to a nice powder. Put this powder in a large kadai and fry on medium flame till the moisture evaporates and when you touch the flour, it should not stick to your hand. Cool it and sieve it. You can store this flour and use it for preparing idiyappam.
OR you can buy rice flour from store and fry it as above and make idiyappam.
Method:
Bring two cups of water to boil. Add a pinch of salt and a teaspoon of oil to the boiling water. Put one cup of flour in a bowl. Add the boiling water little by little and stir with a wooden spoon. Make a soft dough.
Grease idiyappam plate. Take a small quantity of dough and put it in the Idiyappam maker. Press on the greased plate circle wise. Steam it for 5 minutes.
This is the plain idiyappam.
Now-a-days you get frozen Idiyappam. It is very good and saves lot of time. You have to just steam it for five minutes or microwave it.
You can serve it with any kurma / sagu. Vegetable Sodhi is also a good combination to Idiyappam.

Yes. Separate Idiyappam plates (it is flat plate) with different sizes are available in the market. Idiyappam press in different types are also available. For bulk and commercial use, you will get very big size vessels.

Thank you for visiting my site. Yes. You can make idiyappam using the idli plate. If you use the flat idiyappam plate, it looks flat like what we get from hotel/shops.
